INSTRUCTIONS
Prepare Veggies
Heat a drizzle of oil in an 8 qt stockpot over medium heat.
Drizzle Olive Oil
Dice onions and add to the pot.
1 Large Yellow Onion
Chop celery, carrots, and zucchini into bite-sized pieces, adding them to the pot one by one. Mix well after incorporating each ingredient.
4-6 Ribs Celery,
1 Bag Baby Carrots (16 oz bag),
1 Large Zucchini
Cook down about 5 more minutes, until onions are translucent.
Add Spices
Add all spices and mix well.
3 Bay Leaf,
2 tsp Dried Basil,
2 tsp Oregano,
2 tsp Thyme,
2 tsp Salt,
1 tsp Black Pepper,
2 tbsp Minced Garlic
Cook another 2-3 minutes, stirring often.
Add Remaining Soup Ingredients
Add tomatoes.
1 Can Italian Diced Tomatoes (Large, 28 oz)
Drain & rinse beans and add to the pot. Mix well.
2 Can Cannellini Beans (15 oz),
2 Can Kidney Beans (15 oz)
Add vegetable broth to the desired consistency.
2+ Cartons Vegetable Broth Carton (32 oz ea)
Add tomato paste and mix well.
2 tbsp Tomato Paste
Bring to a low boil, then simmer for about 1 hour, stirring often.
While Soup is Simmering
Taste and add more seasonings to preference; more salt is likely needed.
SEPARATELY PREPARE NOODLES
according to package instructions, set aside - do not add to soup.
1 Pkg Ditalini Noodles
IF DESIRED, SEPARATELY PREPARE PLANT-BASED SAUSAGE
according to package instructions, set aside.
1 Pkg Plant Based Sausage (of choice)
To Serve
Combine noodles and plant-based sausage in a bowl and top with soup.
Salt & pepper to taste, add fresh basil (if available), and sprinkle on Nutritional Yeast (if desired).
