Soft, chewy, and packed with an abundance of rich chocolate chips - these vegan cookie bars make the perfect dessert or afternoon treat, and no one will guess they’re vegan!
In a small bowl, combine flaxseed meal and water. Mix well and let sit for 5 minutes to thicken.
1 Tbsp Flaxseed Meal, 3 Tbsp Water
Melt vegan butter until just softened (about 30 seconds in the microwave).
¾ C Vegan Butter
In a large mixing bowl, cream together the vegan butter and white sugar.
⅓ C White Sugar
Add the brown sugar and vanilla extract. Mix until smooth.
1 C Brown Sugar, 1 Tbsp Vanilla Extract
Stir the thickened flax egg and add it to the bowl. Mix until fully combined.
Add flour to the bowl, then sprinkle in the cornstarch, baking soda, and salt. Stir until a thick dough forms (you may need to use your hands).
2¼ C All Purpose Flour, 1 Tbsp Cornstarch, 1 tsp Baking Soda, ½ tsp Salt
Fold in the chocolate chips.
1 C Vegan Chocolate Chips
Lightly coat an 8x8 or 9x9 pan with cooking spray. Press the batter evenly into the pan.
Sprinkle additional chocolate chips on top and arrange them upright for an even look.
Additional Sprinkle of Chocolate Chips
Bake for 25–30 minutes, or until lightly golden. Add a few more minutes if needed. The bars are done when a toothpick inserted into the dough (not a chocolate chip) comes out clean.
Cool in the pan for about 20 minutes.
Cut into squares and serve.
Optional: Top with dairy-free vanilla ice cream for an extra treat.
