Zesty Italian Dressing (Choose Any Vegan-Friendly Brand)
Salt And Pepper To Taste
Tortilla Chips
For Serving
INSTRUCTIONS
Drain and rinse the Black Beans and Black-eyed Peas. Drain the Sweet Corn and add all to a large bowl and mix together.
1 Can Black Beans,
1 Can Black-eyed Peas,
1 Can Sweet Corn
Seed and dice the Plum Tomatoes, then add to the bowl.

Dice the Red Onion and Bell Pepper and add to the bowl.
½ Red Onion,
1 Bell Pepper
Seed and dice the Jalapeno into very small pieces, then add to the bowl and mix well.

If using Cilantro, remove leaves from stems, wash, and finely chop. Start withabout 2 tablespoons, or adjust to your taste.
Small Handful Cilantro
Add the Zesty Italian Dressing to the bowl and mix well. Use more or less as needed to coat the mixture.
¾ C Zesty Italian Dressing (Choose Any Vegan-Friendly Brand)
Refrigerate for at least 15 minutes to let the flavors meld.
Taste and season with Salt and Pepper as desired.
Salt And Pepper To Taste
Serve with Tortilla Chips.
