STEP 1 – PREHEAT THE OVEN AND PREPARE EQUIPMENT:
Preheat oven to 350°F (177°C).
Grease a loaf pan and set it aside.
Place a cookie sheet on the oven rack to catch any potential overflow during baking.
STEP 2 – COMBINE DRY INGREDIENTS:
Sift 3 cups of self-rising flour into a large mixing bowl.
Add ¼ cup of sugar and 1 teaspoon of salt, and lightly stir to combine. Increase amount of sugar to taste.
STEP 3 – ADD WET INGREDIENTS:
Melt 3 tablespoons of vegan butter and add to the dry mixture.
Pour in 1 can of flavorful beer (or ginger ale as a non-alcoholic substitute).
Mix until the dough is shaggy and fully combined—do not overmix.
STEP 4 – TRANSFER TO PAN AND ADD BUTTER:
Spoon the mixture into the greased loaf pan and spread evenly.
Melt the remaining 3 tablespoons of vegan butter and pour it over the top of the batter.
STEP 5 – BAKE:
Place the loaf pan on the prepared cookie sheet and bake for 1 hour.
STEP 6 – COOL AND SERVE:
Remove from oven and let rest in the pan for 15 minutes.
Transfer to a cooling rack and let cool another 15 minutes.
Slice into thick pieces and serve with vegan butter or jam.
