Once your base is ready, it’s time to bring in the color and crunch. Freshly chopped tomatoes, bell pepper, red onion, and jalapeño add bold flavor and vibrant texture. A splash of zesty Italian dressing ties it all together for a punchy, crave-worthy finish that gets even better as it chills.

Drain & Rinse Canned Beans and Corn

STEP 1 – OPEN AND DRAIN CANS:

  • Open cans of Black Beans, Blackeye Peas, and Sweet Corn.

  • Drain well and add to a large mixing bowl.

STEP 2 – CHOP FRESH VEGETABLES:

  • Seed and dice Plum Tomatoes.

  • Dice Red Onion and Bell Pepper.

  • Seed and finely dice Jalapeno.

STEP 3 – COMBINE AND MIX:

  • Add all chopped vegetables to the bowl with the beans and corn.

  • Mix everything together well.

STEP 4 – ADD CILANTRO (OPTIONAL):

  • If using Cilantro, wash, remove stems, and finely chop.

  • Add about 2 Tbsp to the bowl, or to taste.

STEP 5 – DRESS AND CHILL:

  • Add Zesty Italian Dressing and mix to coat.

  • Refrigerate for at least 15 minutes.

STEP 6 – SEASON AND SERVE:

  • Taste and season with Salt and Pepper as needed.

  • Serve with Tortilla Chips and enjoy!

Ingredients

  • 1 Can Black Beans
  • 1 Can Black-eyed Peas
  • 1 Can Sweet Corn
  • 3 Plum Tomatoes
  • ½ Red Onion
  • 1 Bell Pepper
  • 1 Jalapeno
  • Small Handful Cilantro Optional
  • ¾ C Zesty Italian Dressing (Choose Any Vegan-Friendly Brand)
  • Salt And Pepper To Taste
  • Tortilla Chips For Serving

Instructions

  • Drain and rinse the Black Beans and Black-eyed Peas. Drain the Sweet Corn and add all to a large bowl and mix together.
    1 Can Black Beans, 1 Can Black-eyed Peas, 1 Can Sweet Corn
  • Seed and dice the Plum Tomatoes, then add to the bowl.

  • Dice the Red Onion and Bell Pepper and add to the bowl.
    ½ Red Onion, 1 Bell Pepper
  • Seed and dice the Jalapeno into very small pieces, then add to the bowl and mix well.
    1 Jalapeno
  • If using Cilantro, remove leaves from stems, wash, and finely chop. Start withabout 2 tablespoons, or adjust to your taste.
    Small Handful Cilantro
  • Add the Zesty Italian Dressing to the bowl and mix well. Use more or less as needed to coat the mixture.
    ¾ C Zesty Italian Dressing (Choose Any Vegan-Friendly Brand)
  • Refrigerate for at least 15 minutes to let the flavors meld.
  • Taste and season with Salt and Pepper as desired.
