Vegan Cowboy Caviar is so easy to make, it starts with nothing more than opening a couple of cans. Just drain the sweet corn, creamy black beans, and earthy blackeye peas, and you’ve already got the hearty, protein-packed base ready to go.
BRIGHT VEGGIES & BIG FLAVOR
Once your base is ready, it’s time to bring in the color and crunch. Freshly chopped tomatoes, bell pepper, red onion, and jalapeño add bold flavor and vibrant texture. A splash of zesty Italian dressing ties it all together for a punchy, crave-worthy finish that gets even better as it chills.
SIMPLE STEPS TO MAKE THIS VEGAN COWBOY CAVIAR

Drain & Rinse Canned Beans and Corn

Dice Sweet Onion, Jalapeno, Bell Pepper, and Tomatoes

Combine Ingredients in Large Bowl and Add Vegan Italian Dressing

Vegan Cowboy Caviar Ingredients
STEP 1 – OPEN AND DRAIN CANS:
Open cans of Black Beans, Blackeye Peas, and Sweet Corn.
Drain well and add to a large mixing bowl.
STEP 2 – CHOP FRESH VEGETABLES:
Seed and dice Plum Tomatoes.
Dice Red Onion and Bell Pepper.
Seed and finely dice Jalapeno.
STEP 3 – COMBINE AND MIX:
Add all chopped vegetables to the bowl with the beans and corn.
Mix everything together well.
STEP 4 – ADD CILANTRO (OPTIONAL):
If using Cilantro, wash, remove stems, and finely chop.
Add about 2 Tbsp to the bowl, or to taste.
STEP 5 – DRESS AND CHILL:
Add Zesty Italian Dressing and mix to coat.
Refrigerate for at least 15 minutes.
STEP 6 – SEASON AND SERVE:
Taste and season with Salt and Pepper as needed.
Serve with Tortilla Chips and enjoy!

Instructions
